Many people in the West erroneously consider Japanese sushi as "crude fish." This factor is definitely NOT the case! (The exemplary Japanese crude fish dish - which is thin bits of different diverse fish - is generally known as "sashimi." Not sushi!). The expression "sushi" is Japenese for "vinegar rice" - which is the great short-grained rice that, when cooked, is somewhat sticky - and afterward collapsed in prepared rice-vinegar.
